Beetroot Pancakes with Cambay Tiger Prawns

Ingredients:

For the pancakes
•    125g self-raising flour
•    45g garted raw beetroot
•    1 tsp bocarbonate of soda
•    1 free-range egg
•    45g melted butter
•    300g milk
•    1 lemon, zest only
•    vegetable oil, for frying
 

For the Prawns
•    100g unsalted butter
•    250g Cambay Tiger Prawns
•    2 garlic cloves, crushed
•    1 tsp smoked paprika
•    1 lime, juiced and zested
•    1 tbsp chopped fresh dill
 

To Serve
•    125g sour cream
•    1 lemon, juiced & zested

Method:

•    For the pancakes, mix together the flour, beetroot and bicarbonate of soda in a bowl until well combined.
•    Place the egg, butter, milk and lemon zest in a separate bowl & mix.
•    Add this to the beetroot mixture and stir until well combined.
•    Heat a greased heavy-based frying pan.
•    Drop in spoonfuls of the mixture into the pan and cook for one minute on each side.
•    For the prawns, melt the butter in heavy-based saucepan. Once foaming, add the garlic, prawns, paprika, lime juice and zest and cook for 3-4 minutes. Stir in the fresh dill and remove from the heat.
•    In a separate bowl mix the sour cream, lemon juice and zest until well combined.
